As a teacher in a public school with 98% free or rdeuced lunch students, I thought this article was (unfortunately) right on target. Ironically, we too notice a penchant for salad when other vegetables are rejected. 4 out of 5 days of the week we have a processed chicken entree (patties, nuggets, stars, etc). Money is a HUGE issue.
